Meal Details:
Thaw meal completely (we recommend thawing in fridge for 2 days). SLOWCOOKER (Preferred Method): Place contents of zipper bag in 3.5 litre slowcooker. (Cooking time will have to be adjusted if you are using a different size of slowcooker - the smaller the slowcooker the better.). Cook on low for 4-6 hours. DO NOT OVERCOOK or the meal will become mushy. 30 minutes prior to eating, stir the bag of pineapple chunks to the slowcooker and begin preparing rice. OVEN: Preheat oven to 350. Place contents of the bag into a covered baking dish. Bake for 50-75 minutes or until the pork has an internal temperature of 165. 30 minutes prior to eating, stir the bag of pineapple chunks to the baking dish and begin preparing rice. Serve pork over rice and enjoy! INSTANT POT INSTRUCTIONS: Thaw meal for best results. Begin preparing rice separately on the stovetop. Empty contents of large zipper bag in the Instant Pot. Add 2 Tbsp of hot water for a 2-3 serving (1/4 cup of water for a 4-6 serving) and cook on High Pressure Meat setting for 8-10 minutes and allow to naturally release for 5 minutes. After 5 minutes, QR and remove the lid. Add a cornstarch slurry of 1-2 Tbsp of cornstarch mixed with an equal amount of cold water and slowly stir into the sauce on the Sauté setting until thickened. Stir in the pineapple chunks and serve on a bed of hot rice. Enjoy!
(BAKE/SLOWCOOKER) Tender chunks of pork are slow cooked in a mixture of brown sugar, pineapple juice, soy sauce and red peppers.
